  • Zucchini - 2 medium
  • Bell pepper (red) - 1 medium
  • Bell pepper (green) - 1 medium
  • Shallots - 2 medium
  • Garlic - 2 cloves
  • Ginger - 1 inch piece
  • Coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
  2. Chop the bell peppers, shallots, garlic, and ginger into small pieces.
  3. In a large skillet, heat the coconut oil over medium heat and add the cumin seeds.
  4. Once the seeds start to sizzle, add the chopped shallots, garlic, and ginger. Sauté until the shallots are translucent.
  5. Add the chopped bell peppers and sauté for about 3-4 minutes until they are slightly tender.
  6. Stir in the turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the vegetables with the spices.
  7. Add the zucchini noodles to the skillet and toss everything together. Cook for an additional 5-7 minutes until the zucchini is tender but still has a slight crunch.
  8. Remove from heat, drizzle with lemon juice, and garnish with fresh cilantro before serving.
