Ingredients

  • Mushrooms (button or cremini) - 300 grams, sliced
  • Ghee (or coconut oil) - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Ginger - 1 teaspoon, minced
  • Garlic - 1 teaspoon, minced
  • Green bell pepper - 1 medium, diced
  • Tomato - 1 medium, pureed
  • Kashmiri red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat ghee in a pan over medium heat and add the chopped onions. Sauté until they are translucent.
  2. Add minced ginger and garlic to the pan, and sauté for an additional 1-2 minutes until fragrant.
  3. Stir in the diced green bell pepper and cook for 3-4 minutes until slightly softened.
  4. Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes.
  5. Pour in the pureed tomato and stir well. Cook for 2-3 minutes until the mixture is well combined.
  6. Add the Kashmiri red chili powder, coriander powder, cumin powder, and salt. Mix thoroughly and cook for another 4-5 minutes.
  7. Sprinkle garam masala on top, stir, and let it cook for another 1-2 minutes.
  8. Garnish with fresh cilantro before serving.
