- Mushrooms (button or cremini) - 300 grams, sliced
- Ghee (or coconut oil) - 2 tablespoons
- Onion - 1 medium, finely chopped
- Ginger - 1 teaspoon, minced
- Garlic - 1 teaspoon, minced
- Green bell pepper - 1 medium, diced
- Tomato - 1 medium, pureed
- Kashmiri red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Heat ghee in a pan over medium heat and add the chopped onions. Sauté until they are translucent.
- Add minced ginger and garlic to the pan, and sauté for an additional 1-2 minutes until fragrant.
- Stir in the diced green bell pepper and cook for 3-4 minutes until slightly softened.
- Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes.
- Pour in the pureed tomato and stir well. Cook for 2-3 minutes until the mixture is well combined.
- Add the Kashmiri red chili powder, coriander powder, cumin powder, and salt. Mix thoroughly and cook for another 4-5 minutes.
- Sprinkle garam masala on top, stir, and let it cook for another 1-2 minutes.
- Garnish with fresh cilantro before serving.
