- Lamb shoulder - 400 grams, cut into cubes
- Ghee - 2 tablespoons
- Onion - 1 medium, finely chopped
- Ginger - 1 tablespoon, minced
- Garlic - 1 tablespoon, minced
- Green bell pepper - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Tomatoes - 2 medium, pureed
- Kashmiri red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Heat ghee in a heavy-bottomed pan over medium heat.
- Add chopped onions and sauté until they turn golden brown.
- Stir in minced ginger and garlic, and cook for another minute until fragrant.
- Add the lamb cubes and sear them until browned on all sides.
- Stir in the green and red bell peppers, cooking for about 3-4 minutes until slightly softened.
- Pour in the pureed tomatoes, and add the Kashmiri red chili powder, coriander powder, cumin powder, and salt.
- Mix well and let it simmer on low heat for 20 minutes, stirring occasionally until the lamb is cooked through and tender.
- Sprinkle garam masala over the dish, stir, and cook for another 2 minutes.
- Garnish with fresh cilantro before serving.
