Ingredients

  • Lamb shoulder - 400 grams, cut into cubes
  • Ghee - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Ginger - 1 tablespoon, minced
  • Garlic - 1 tablespoon, minced
  • Green bell pepper - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomatoes - 2 medium, pureed
  • Kashmiri red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat ghee in a heavy-bottomed pan over medium heat.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Stir in minced ginger and garlic, and cook for another minute until fragrant.
  4. Add the lamb cubes and sear them until browned on all sides.
  5. Stir in the green and red bell peppers, cooking for about 3-4 minutes until slightly softened.
  6. Pour in the pureed tomatoes, and add the Kashmiri red chili powder, coriander powder, cumin powder, and salt.
  7. Mix well and let it simmer on low heat for 20 minutes, stirring occasionally until the lamb is cooked through and tender.
  8. Sprinkle garam masala over the dish, stir, and cook for another 2 minutes.
  9. Garnish with fresh cilantro before serving.
