Ingredients

  • Eggs - 4 large
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Bell pepper - 1 medium, chopped (red or green)
  • Tomato - 1 medium, finely chopped
  • Ginger-garlic paste - 1 teaspoon
  • Green chilies - 2, slit
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a kadai (wok) over medium heat.
  2. Add finely chopped onions and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and slit green chilies; cook for 1-2 minutes until fragrant.
  4. Add chopped bell pepper and sauté for another 2-3 minutes until slightly softened.
  5. Add the finely chopped tomato and cook until it becomes mushy.
  6. Sprinkle turmeric powder, red chili powder, coriander powder, cumin powder, and salt; mix well and cook for about 3-4 minutes until the spices are well combined.
  7. Crack the eggs directly into the masala and stir gently to combine, ensuring the yolks remain intact.
  8. Cover the kadai and let the eggs cook for about 5-7 minutes until the whites are set but the yolks are still soft.
  9. Sprinkle garam masala over the top, garnish with fresh coriander leaves, and serve hot.
