- Bell pepper - 1 medium, chopped (red or green)
- Tomato - 1 medium, finely chopped
- Ginger-garlic paste - 1 teaspoon
- Green chilies - 2, slit
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat coconut oil in a kadai (wok) over medium heat.
- Add finely chopped onions and sauté until they turn golden brown.
- Stir in ginger-garlic paste and slit green chilies; cook for 1-2 minutes until fragrant.
- Add chopped bell pepper and sauté for another 2-3 minutes until slightly softened.
- Add the finely chopped tomato and cook until it becomes mushy.
- Sprinkle turmeric powder, red chili powder, coriander powder, cumin powder, and salt; mix well and cook for about 3-4 minutes until the spices are well combined.
- Crack the eggs directly into the masala and stir gently to combine, ensuring the yolks remain intact.
- Cover the kadai and let the eggs cook for about 5-7 minutes until the whites are set but the yolks are still soft.
- Sprinkle garam masala over the top, garnish with fresh coriander leaves, and serve hot.
