Ingredients

  • Chicken, boneless - 300 grams
  • Bell peppers (red and green) - 1 cup, chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger-garlic paste - 1 tablespoon
  • Kadai masala (cumin, coriander, fennel, red chili powder) - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a kadai or deep pan over medium heat.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
  4. Add the chicken pieces to the pan and cook until they are browned on all sides.
  5. Pour in the tomato puree and mix well. Cook for 5-7 minutes until the oil separates from the mixture.
  6. Add the chopped bell peppers and stir in the kadai masala, turmeric powder, and salt. Cook for another 5 minutes, allowing the peppers to soften slightly.
  7. Sprinkle garam masala over the chicken and mix well. Cook for an additional 2 minutes.
  8. Garnish with fresh coriander leaves and serve hot.
