Ingredients

  • Almond flour - 1 cup
  • Psyllium husk - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Water - 1/4 cup (adjust as needed)
  • Olive oil - 2 tablespoons (for dough)
  • Moong dal (split green gram) - 1/2 cup (soaked for 2 hours)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Olive oil - for frying (about 1/2 cup)

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, and salt. Mix well.
  2. Add olive oil and water gradually until a dough forms. Knead for about 2-3 minutes until smooth.
  3. Cover the dough with a damp cloth and let it rest for 15 minutes.
  4. In a saucepan, boil the soaked moong dal until soft, about 15-20 minutes. Drain and let it cool.
  5. In a pan, heat 1 tablespoon of olive oil and add cumin seeds. Once they splutter, add grated ginger and sauté for 1 minute.
  6. Add the boiled moong dal, coriander powder, turmeric powder, red chili powder, garam masala, and chopped cilantro. Mix well and cook for another 3-4 minutes. Let the filling cool.
  7. Divide the dough into equal portions and roll each portion into a ball.
  8. Flatten each ball into a small disc and place about 1 tablespoon of the filling in the center. Fold the edges over the filling and seal tightly, shaping it back into a ball.
  9. Heat olive oil in a frying pan over medium heat. Once hot, gently fry the kachoris until golden brown on both sides, about 3-4 minutes per side.
  10. Remove the kachoris and place them on a paper towel to absorb excess oil. Serve warm with keto-friendly chutney or dip.
