Ingredients

  • Almond flour - 1/2 cup
  • Psyllium husk powder - 1 tablespoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch
  • Water - 1/2 cup
  • Erythritol - 1/4 cup
  • Saffron strands - a pinch
  • Cardamom powder - 1/4 teaspoon
  • Ghee or coconut oil - for frying
  • Rose water - 1 teaspoon (optional)

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt. Mix well.
  2. Gradually add water to the dry ingredients, stirring until you achieve a smooth, thick batter. Let it rest for about 5 minutes.
  3. In a small saucepan, heat erythritol, 1/2 cup water, saffron strands, and cardamom powder over medium heat. Stir until the erythritol dissolves completely, then simmer for 5 minutes to create a syrup. Remove from heat and add rose water if using.
  4. Heat ghee or coconut oil in a pan over medium heat for frying.
  5. Transfer the batter to a piping bag or a squeeze bottle. Once the oil is hot, pipe the batter into spiral shapes or concentric circles into the oil, frying for about 2-3 minutes on each side until golden and crispy.
  6. Remove the fried jalebis and immediately dip them into the warm syrup for a few seconds, allowing them to soak up the sweetness.
  7. Place the jalebis on a plate lined with paper towels to drain excess syrup, then serve warm.
