- Almond flour - 1 cup
- Coconut flour - 2 tablespoons
- Baking powder - 1 teaspoon
- Greek yogurt - 1/4 cup
- Water - 1/2 cup (adjust as needed)
- Salt - 1/2 teaspoon
- Black mustard seeds - 1 teaspoon
- Curry leaves - 5-6 leaves, chopped
- Ghee or oil - 1 tablespoon (for greasing)
Steps
- In a bowl, mix almond flour, coconut flour, baking powder, and salt until well combined.
- Add Greek yogurt and water gradually, mixing until a smooth batter forms. The consistency should be thick but pourable.
- In a small pan, heat ghee or oil and add mustard seeds. Once they start to crackle, add chopped curry leaves and sauté for a minute.
- Pour the tempered mixture into the batter and mix well.
- Grease the idli molds with ghee or oil and fill them with the batter, leaving some space for rising.
- Steam the idlis in an idli steamer or a large pot with a steaming rack for about 10-12 minutes, or until a toothpick comes out clean.
- Remove the idlis from the molds and serve hot with coconut chutney or sambar.
