Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Greek yogurt - 1/4 cup
  • Water - 1/2 cup (adjust as needed)
  • Salt - 1/2 teaspoon
  • Black mustard seeds - 1 teaspoon
  • Curry leaves - 5-6 leaves, chopped
  • Ghee or oil - 1 tablespoon (for greasing)

Steps

  1. In a bowl, mix almond flour, coconut flour, baking powder, and salt until well combined.
  2. Add Greek yogurt and water gradually, mixing until a smooth batter forms. The consistency should be thick but pourable.
  3. In a small pan, heat ghee or oil and add mustard seeds. Once they start to crackle, add chopped curry leaves and sauté for a minute.
  4. Pour the tempered mixture into the batter and mix well.
  5. Grease the idli molds with ghee or oil and fill them with the batter, leaving some space for rising.
  6. Steam the idlis in an idli steamer or a large pot with a steaming rack for about 10-12 minutes, or until a toothpick comes out clean.
  7. Remove the idlis from the molds and serve hot with coconut chutney or sambar.
