Ingredients

  • Fresh green beans - 200 grams
  • Coconut oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Urad dal (split black gram) - 1 tablespoon
  • Dried red chili - 1
  • Curry leaves - 10 leaves
  • Grated coconut - 3 tablespoons
  • Salt - to taste
  • Turmeric powder - 1/4 teaspoon

Steps

  1. Wash the green beans and trim the ends, then cut them into 1-inch pieces.
  2. Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter.
  3. Add urad dal and dried red chili to the pan. Sauté until the dal turns golden brown.
  4. Add curry leaves and turmeric powder, and stir for a few seconds to release the flavors.
  5. Add the chopped green beans to the pan and mix well with the spices.
  6. Cover the pan and cook for about 5-7 minutes, stirring occasionally, until the beans are tender but still crisp.
  7. Add grated coconut and salt to taste, and mix well. Cook for an additional 2-3 minutes.
  8. Remove from heat and serve hot as a side dish.
