- Urad dal (split black gram) - 1 tablespoon
- Dried red chili - 1
- Curry leaves - 10 leaves
- Grated coconut - 3 tablespoons
- Salt - to taste
- Turmeric powder - 1/4 teaspoon
Steps
- Wash the green beans and trim the ends, then cut them into 1-inch pieces.
- Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add urad dal and dried red chili to the pan. Sauté until the dal turns golden brown.
- Add curry leaves and turmeric powder, and stir for a few seconds to release the flavors.
- Add the chopped green beans to the pan and mix well with the spices.
- Cover the pan and cook for about 5-7 minutes, stirring occasionally, until the beans are tender but still crisp.
- Add grated coconut and salt to taste, and mix well. Cook for an additional 2-3 minutes.
- Remove from heat and serve hot as a side dish.
