  • Cauliflower - 300 grams, cut into florets
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Soy sauce (low sodium) - 2 tablespoons
  • Chili sauce (sugar-free) - 1 tablespoon
  • Green bell pepper - 50 grams, diced
  • Onion - 50 grams, diced
  • Spring onions - 2, chopped
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Sesame oil - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the almond flour, salt, and black pepper.
  3. In another bowl, beat the egg and mix in minced garlic and grated ginger.
  4. Dip each cauliflower floret into the egg mixture, then coat with the almond flour mixture, ensuring they are well coated.
  5. Arrange the coated florets on the prepared baking tray and bake for 20 minutes, turning halfway through, until golden and crispy.
  6. While the cauliflower is baking, heat coconut oil in a pan over medium heat.
  7. Add diced onion and green bell pepper to the pan, sauté until they soften, about 3-4 minutes.
  8. Stir in the baked cauliflower, soy sauce, and chili sauce, tossing well to coat the florets in the sauce.
  9. Cook for an additional 2-3 minutes to heat through and let the flavors meld.
  10. Drizzle with sesame oil and garnish with chopped spring onions before serving.
