- Eggplant - 1 large (about 300g)
- Ground beef or turkey - 200g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Tomato puree - 100g
- Italian seasoning - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cottage cheese - 100g
- Mozzarella cheese - 100g, shredded
- Parmesan cheese - 30g, grated
- Fresh basil - a handful, chopped (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into thin strips (about 0.5 cm thick) and sprinkle with salt. Let it sit for 15 minutes to draw out moisture, then rinse and pat dry.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the ground beef or turkey to the skillet and cook until browned. Stir in the tomato puree, Italian seasoning, salt, and pepper. Simmer for 5-7 minutes.
- While the meat sauce simmers, brush the eggplant slices with the remaining olive oil and roast them in the preheated oven for about 15 minutes, flipping halfway through until they are tender.
- In a baking dish, layer half of the roasted eggplant slices, followed by half of the meat sauce, half of the cottage cheese, and half of the mozzarella cheese. Repeat the layers with the remaining ingredients.
- Top the final layer with grated Parmesan cheese and bake in the oven for 20 minutes, or until the cheese is bubbly and golden.
- Allow to cool for 5 minutes before slicing. Garnish with fresh basil if desired, and serve.
