Ingredients

  • Eggplant - 300 grams
  • Zucchini - 2 medium-sized (about 300 grams)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium (about 100 grams), finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, grated
  • Tomato - 1 medium (about 100 grams), finely chopped
  • Green chili - 1, finely chopped (adjust to taste)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F). Cut the eggplant in half lengthwise, brush with 1 tablespoon of olive oil, and place it cut side down on a baking sheet. Roast for about 25-30 minutes until soft and charred.
  2. While the eggplant is roasting, spiralize the zucchinis to create noodles and set aside.
  3. In a pan, heat the remaining tablespoon of olive oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onions, green chili, ginger, and garlic to the pan. Sauté until the onions are golden brown.
  5. Stir in the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes soften.
  6. Once the eggplant is roasted, scoop out the flesh and add it to the pan. Mix well and cook for another 5 minutes.
  7. Add garam masala and mix thoroughly. Adjust the seasoning if necessary.
  8. In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender. Do not overcook.
  9. Serve the eggplant bharta over the zucchini noodles, garnished with fresh cilantro.
