Ingredients
- Eggplant - 300 grams
- Zucchini - 2 medium-sized (about 300 grams)
- Olive oil - 2 tablespoons
- Onion - 1 medium (about 100 grams), finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Tomato - 1 medium (about 100 grams), finely chopped
- Green chili - 1, finely chopped (adjust to taste)
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F). Cut the eggplant in half lengthwise, brush with 1 tablespoon of olive oil, and place it cut side down on a baking sheet. Roast for about 25-30 minutes until soft and charred.
- While the eggplant is roasting, spiralize the zucchinis to create noodles and set aside.
- In a pan, heat the remaining tablespoon of olive oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions, green chili, ginger, and garlic to the pan. Sauté until the onions are golden brown.
- Stir in the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes soften.
- Once the eggplant is roasted, scoop out the flesh and add it to the pan. Mix well and cook for another 5 minutes.
- Add garam masala and mix thoroughly. Adjust the seasoning if necessary.
- In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender. Do not overcook.
- Serve the eggplant bharta over the zucchini noodles, garnished with fresh cilantro.
