- Cauliflower - 300 grams, grated
- Eggs - 2 large
- Olive oil - 2 tablespoons
- Ginger - 1 teaspoon, minced
- Garlic - 1 teaspoon, minced
- Green bell pepper - 1/2 cup, diced
- Carrot - 1/2 cup, diced
- Green peas - 1/4 cup, frozen
- Soy sauce (or coconut aminos) - 2 tablespoons
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Spring onions - 2, chopped for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced ginger and garlic, sauté for about 1 minute until fragrant.
- Add diced green bell pepper and carrot, and cook for 3-4 minutes until they start to soften.
- Stir in the grated cauliflower, frozen green peas, cumin powder, turmeric powder, salt, and black pepper. Cook for another 5-6 minutes, stirring occasionally, until the cauliflower is tender.
- Push the vegetable mixture to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix them into the cauliflower mixture.
- Drizzle the soy sauce over the mixture and stir well to combine all ingredients. Cook for an additional 2 minutes.
- Garnish with chopped spring onions before serving.
