- Lettuce leaves - 2 large
- Avocado - 1 small, sliced
- Cheese slices (optional) - 2 slices
Steps
- Heat ghee or coconut oil in a non-stick pan over medium heat.
- Add finely chopped onions and sauté until they become translucent.
- Stir in the chopped green chili and grated ginger, cooking for an additional minute.
- Add the chopped tomatoes, turmeric powder, cumin powder, coriander powder, and salt. Cook until the tomatoes soften, about 2-3 minutes.
- In a bowl, beat the eggs and pour them into the pan. Stir gently to scramble the eggs until fully cooked, about 3-4 minutes.
- Remove from heat and stir in chopped cilantro.
- To assemble the burger, place a lettuce leaf on a plate, add a generous portion of the egg bhurji, top with avocado slices, and if desired, a slice of cheese.
- Cover with another lettuce leaf to create the 'burger' and serve immediately.
