  • Turmeric powder - 1/4 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lettuce leaves - 2 large
  • Avocado - 1 small, sliced
  • Cheese slices (optional) - 2 slices

Steps

  1. Heat ghee or coconut oil in a non-stick pan over medium heat.
  2. Add finely chopped onions and sauté until they become translucent.
  3. Stir in the chopped green chili and grated ginger, cooking for an additional minute.
  4. Add the chopped tomatoes, turmeric powder, cumin powder, coriander powder, and salt. Cook until the tomatoes soften, about 2-3 minutes.
  5. In a bowl, beat the eggs and pour them into the pan. Stir gently to scramble the eggs until fully cooked, about 3-4 minutes.
  6. Remove from heat and stir in chopped cilantro.
  7. To assemble the burger, place a lettuce leaf on a plate, add a generous portion of the egg bhurji, top with avocado slices, and if desired, a slice of cheese.
