- Almond flour - 100 grams
- Unsweetened condensed coconut milk - 100 ml
- Erythritol - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Ghee (clarified butter) - 1 tablespoon
- Chopped pistachios - 1 tablespoon
- Saffron strands - a pinch
Steps
- In a non-stick pan, heat the ghee over medium heat.
- Add the almond flour to the pan and roast it until it turns golden brown, stirring continuously (about 5-7 minutes).
- Lower the heat and add the unsweetened condensed coconut milk and erythritol to the roasted almond flour.
- Stir the mixture thoroughly and cook for another 10-12 minutes until it thickens and starts to leave the sides of the pan.
- Add cardamom powder and mix well, cooking for an additional 2 minutes.
- Remove from heat and allow the mixture to cool slightly.
- Once cool enough to handle, grease your palms with a little ghee and shape the mixture into small, round pedas.
- Garnish each peda with chopped pistachios and a saffron strand.
- Let the pedas cool completely before serving.
