Ingredients

  • Almond flour - 100 grams
  • Unsweetened condensed coconut milk - 100 ml
  • Erythritol - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Ghee (clarified butter) - 1 tablespoon
  • Chopped pistachios - 1 tablespoon
  • Saffron strands - a pinch

Steps

  1. In a non-stick pan, heat the ghee over medium heat.
  2. Add the almond flour to the pan and roast it until it turns golden brown, stirring continuously (about 5-7 minutes).
  3. Lower the heat and add the unsweetened condensed coconut milk and erythritol to the roasted almond flour.
  4. Stir the mixture thoroughly and cook for another 10-12 minutes until it thickens and starts to leave the sides of the pan.
  5. Add cardamom powder and mix well, cooking for an additional 2 minutes.
  6. Remove from heat and allow the mixture to cool slightly.
  7. Once cool enough to handle, grease your palms with a little ghee and shape the mixture into small, round pedas.
  8. Garnish each peda with chopped pistachios and a saffron strand.
  9. Let the pedas cool completely before serving.
