Ingredients

  • Chickpea flour (besan) - 100 grams
  • Almond flour - 50 grams
  • Baking powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 150 ml
  • Coconut oil - 1 tablespoon (for greasing)
  • Cabbage - 50 grams (finely chopped)
  • Carrot - 30 grams (grated)
  • Green chili - 1 (finely chopped)
  • Coriander leaves - 2 tablespoons (chopped)
  • Cheese slice - 2 (optional)
  • Lettuce leaves - 2
  • Tomato - 1 (sliced)
  • Onion - 1 small (sliced)
  • Mayonnaise - 2 tablespoons (optional, for topping)
  • Mustard - 1 tablespoon (optional, for topping)

Steps

  1. In a mixing bowl, combine chickpea flour, almond flour, baking powder, turmeric powder, and salt.
  2. Gradually add water to the dry ingredients, whisking until you achieve a smooth batter.
  3. Fold in the chopped cabbage, grated carrot, green chili, and coriander leaves into the batter.
  4. Grease a steaming tray or a round cake pan with coconut oil, then pour the batter into it, spreading it evenly.
  5. Steam the batter for about 15-20 minutes until a toothpick inserted comes out clean.
  6. Once cooked, let the dhokla cool for a few minutes before cutting it into round burger patties.
  7. In a skillet, lightly toast the dhokla patties for a couple of minutes on each side until golden brown.
  8. Assemble the burgers by placing a dhokla patty on a lettuce leaf, topped with a slice of cheese, tomato, onion, and a drizzle of mayonnaise and mustard if desired.
  9. Cover with another lettuce leaf and serve immediately.
