- Besan (chickpea flour) - 100 grams
- Greek yogurt - 50 grams
- Water - 100 ml
- Baking soda - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Green chili (finely chopped) - 1
- Ginger (grated) - 1 teaspoon
- Coriander leaves (chopped) - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 5-6 leaves
- Coconut oil - 1 tablespoon
Steps
- In a mixing bowl, combine besan, Greek yogurt, water, baking soda, turmeric powder, salt, green chili, ginger, and coriander leaves to create a smooth batter.
- Let the batter rest for 10-15 minutes while you prepare the steamer.
- Grease a steaming tray or a small cake pan with coconut oil.
- Pour the batter into the greased tray and spread it evenly.
- Bring water to a boil in the steamer and place the tray inside. Cover and steam for 20 minutes or until a toothpick inserted comes out clean.
- In a small pan, heat coconut oil over medium heat and add mustard seeds. Once they start to crackle, add curry leaves and sauté for a minute.
- Pour the tempering over the steamed dhokla and let it cool slightly before cutting into squares.
- Serve warm with green chutney or yogurt.
