Ingredients

  • Besan (chickpea flour) - 100 grams
  • Greek yogurt - 50 grams
  • Water - 100 ml
  • Baking soda - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Green chili (finely chopped) - 1
  • Ginger (grated) - 1 teaspoon
  • Coriander leaves (chopped) - 1 tablespoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 5-6 leaves
  • Coconut oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine besan, Greek yogurt, water, baking soda, turmeric powder, salt, green chili, ginger, and coriander leaves to create a smooth batter.
  2. Let the batter rest for 10-15 minutes while you prepare the steamer.
  3. Grease a steaming tray or a small cake pan with coconut oil.
  4. Pour the batter into the greased tray and spread it evenly.
  5. Bring water to a boil in the steamer and place the tray inside. Cover and steam for 20 minutes or until a toothpick inserted comes out clean.
  6. In a small pan, heat coconut oil over medium heat and add mustard seeds. Once they start to crackle, add curry leaves and sauté for a minute.
  7. Pour the tempering over the steamed dhokla and let it cool slightly before cutting into squares.
  8. Serve warm with green chutney or yogurt.
