- Yellow Moong Dal - 50 grams
- Spinach - 100 grams, chopped
- Tomato - 1 medium, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin Seeds - 1 teaspoon
- Mustard Seeds - 1 teaspoon
- Turmeric Powder - 1/2 teaspoon
- Garam Masala - 1/2 teaspoon
- Coconut Oil - 1 tablespoon
- Vegetable Broth - 500 ml
- Salt - to taste
- Black Pepper - to taste
- Lemon Juice - 1 tablespoon
- Coriander Leaves - for garnish
Steps
- Rinse the yellow moong dal under cold water until the water runs clear, then soak it in water for about 15 minutes.
- In a pot, heat the coconut oil over medium heat. Add cumin seeds and mustard seeds, and let them splutter for about 30 seconds.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
- Add the chopped tomato, turmeric powder, garam masala, salt, and black pepper. Cook until the tomatoes soften, about 5 minutes.
- Drain the soaked moong dal and add it to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the dal is tender.
- Add the chopped spinach and cook for another 3-5 minutes until wilted.
- Finish with lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh coriander leaves.
