Ingredients

  • Almond flour - 1 cup
  • Psyllium husk - 2 tbsp
  • Salt - 1/2 tsp
  • Water - 1/4 cup (adjust as needed)
  • Greek yogurt (unsweetened) - 1 cup
  • Cumin powder - 1/2 tsp
  • Chaat masala - 1/2 tsp
  • Fresh coriander leaves - 2 tbsp (chopped)
  • Fresh mint leaves - 2 tbsp (chopped)
  • Green chili - 1 (finely chopped, optional)
  • Lemon juice - 1 tbsp
  • Keto-friendly tamarind chutney - 2 tbsp
  • Keto-friendly green chutney - 2 tbsp
  • Black salt - to taste

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, and salt. Gradually add water until a dough forms.
  2. Knead the dough for a few minutes until smooth. Divide the dough into small balls, about the size of a marble.
  3. Preheat a non-stick pan over medium heat. Roll each ball into a thin disc (about 2 inches in diameter) between two sheets of parchment paper.
  4. Cook each disc on the heated pan for 1-2 minutes on each side until golden brown and crisp. Set aside to cool.
  5. In a separate bowl, mix Greek yogurt with cumin powder, chaat masala, chopped coriander, mint, green chili, lemon juice, and black salt. Adjust seasoning to taste.
  6. To assemble, take one puri, break a small hole on top, and fill it with the spiced yogurt mixture.
  7. Drizzle tamarind chutney and green chutney over the filled puris. Garnish with additional chopped herbs if desired.
  8. Serve immediately to enjoy the crunchiness of the puris with the creamy yogurt filling.
