- Coconut milk - 200 ml, full fat
- Coconut oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Dried red chili - 1, whole
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon, or to taste
- Fresh coriander - 2 tablespoons, chopped for garnish
- Lemon juice - 1 tablespoon
Steps
- Start by grating the cauliflower using a box grater or a food processor until it resembles rice grains.
- In a large skillet, heat the coconut oil over medium heat. Add the mustard seeds and cumin seeds; sauté until they start to pop.
- Add the dried red chili and turmeric powder to the skillet, stirring for about 30 seconds until fragrant.
- Add the grated cauliflower to the skillet, mixing well to coat with the spices. Cook for about 5 minutes, stirring occasionally.
- Pour in the coconut milk and salt, stirring to combine. Reduce the heat to low and simmer for another 10 minutes, allowing the cauliflower to become tender and absorb the coconut flavor.
- Remove from heat, add lemon juice, and mix well. Garnish with fresh coriander before serving.
