Ingredients

  • Unsweetened shredded coconut - 150 grams
  • Coconut cream - 100 ml
  • Erythritol - 30 grams
  • Cardamom powder - 1/2 teaspoon
  • Ghee (clarified butter) - 1 tablespoon
  • Chopped almonds - 10 grams (for garnish)

Steps

  1. In a non-stick pan, heat the ghee over medium heat until melted.
  2. Add the shredded coconut to the pan and toast for about 5 minutes, stirring frequently until lightly golden.
  3. Pour in the coconut cream and add the erythritol and cardamom powder, mixing well to combine.
  4. Cook the mixture on low heat, stirring constantly, for about 10-12 minutes until it thickens and starts to leave the sides of the pan.
  5. Remove from heat and let it cool slightly. Then, transfer the mixture to a greased plate or tray, pressing it down firmly to create an even layer.
  6. Allow the burfi to cool completely at room temperature, then refrigerate for at least 1 hour to set.
  7. Once set, cut into squares or diamond shapes and garnish with chopped almonds before serving.
