Ingredients

  • Almond flour - 1 cup
  • Psyllium husk - 2 tablespoons

  • Eggs - 2 large
  • Butter - 2 tablespoons, melted
  • Fresh cilantro - 1/4 cup, chopped
  • Green chili - 1, finely chopped
  • Coconut - 1/2 cup, grated
  • Lemon juice - 1 tablespoon
  • Cumin powder - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Water - 1/4 cup

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. In another bowl, whisk together the eggs and melted butter until smooth.
  4. Add the wet ingredients to the dry ingredients and mix well. Slowly incorporate water until the dough is formed.
  5. Spread the dough onto the prepared baking tray to form a rectangular shape, about 1 cm thick.
  6. Bake for 15-20 minutes or until golden brown. Let it cool before slicing into two equal pieces.
  7. In a separate bowl, mix together grated coconut, chopped cilantro, green chili, lemon juice, cumin powder, and pepper to create the chutney.
  8. Spread the coconut chutney generously on one slice of the baked bread and top with the second slice to form a sandwich.
