Ingredients

  • Black sesame seeds - 2 tablespoons
  • Dried red chilies - 5 pieces
  • Coriander seeds - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Urid dal (split black gram) - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Asafoetida (hing) - a pinch
  • Curry leaves - 10 leaves

Steps

  1. In a dry skillet over medium heat, add the black sesame seeds and toast until they start to pop, about 2-3 minutes. Remove and set aside.
  2. In the same skillet, add the dried red chilies, coriander seeds, cumin seeds, and urid dal. Toast until fragrant and the dal turns golden brown, about 4-5 minutes.
  3. Add the curry leaves and asafoetida to the skillet, stirring for an additional minute until the leaves are crisp.
  4. Remove the mixture from heat and let it cool slightly.
  5. Transfer the toasted mixture to a spice grinder, add salt, and grind to a fine powder.
  6. Store the chutney podi in an airtight container. Serve with coconut oil or ghee.
