- Black sesame seeds - 2 tablespoons
- Dried red chilies - 5 pieces
- Coriander seeds - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Urid dal (split black gram) - 2 tablespoons
- Salt - 1/2 teaspoon
- Asafoetida (hing) - a pinch
- Curry leaves - 10 leaves
Steps
- In a dry skillet over medium heat, add the black sesame seeds and toast until they start to pop, about 2-3 minutes. Remove and set aside.
- In the same skillet, add the dried red chilies, coriander seeds, cumin seeds, and urid dal. Toast until fragrant and the dal turns golden brown, about 4-5 minutes.
- Add the curry leaves and asafoetida to the skillet, stirring for an additional minute until the leaves are crisp.
- Remove the mixture from heat and let it cool slightly.
- Transfer the toasted mixture to a spice grinder, add salt, and grind to a fine powder.
- Store the chutney podi in an airtight container. Serve with coconut oil or ghee.
