- Chicken thighs - 300 grams, boneless and skinless
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit (adjust to taste)
- Tomato - 1 medium, chopped
- Chicken broth - 500 ml (low-sodium)
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - for garnish
- Lemon juice - 1 tablespoon
Steps
- Heat coconut oil in a pot over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 2 minutes until fragrant.
- Add the chopped tomato and cook until soft, about 3-4 minutes.
- Add the chicken thighs to the pot and cook for 5-7 minutes until they are browned on all sides.
- Sprinkle in the coriander powder, cumin powder, turmeric powder, garam masala, salt, and black pepper. Stir well to coat the chicken with the spices.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15-20 minutes until the chicken is cooked through.
- Once cooked, remove the chicken thighs, shred them into bite-sized pieces, and return them to the pot.
- Stir in the lemon juice and adjust seasoning if necessary. Garnish with fresh coriander leaves before serving.
