Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit (adjust to taste)
  • Tomato - 1 medium, chopped
  • Chicken broth - 500 ml (low-sodium)
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat coconut oil in a pot over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 2 minutes until fragrant.
  3. Add the chopped tomato and cook until soft, about 3-4 minutes.
  4. Add the chicken thighs to the pot and cook for 5-7 minutes until they are browned on all sides.
  5. Sprinkle in the coriander powder, cumin powder, turmeric powder, garam masala, salt, and black pepper. Stir well to coat the chicken with the spices.
  6. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15-20 minutes until the chicken is cooked through.
  7. Once cooked, remove the chicken thighs, shred them into bite-sized pieces, and return them to the pot.
  8. Stir in the lemon juice and adjust seasoning if necessary. Garnish with fresh coriander leaves before serving.
