- Chicken breast - 300 grams, diced
- Fresh spinach - 150 grams, washed and chopped
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit (optional)
- Coconut oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Heavy cream - 100 ml
- Salt - to taste
- Black pepper - to taste
Steps
- Heat coconut oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic, grated ginger, and green chili. Cook for another 2 minutes until fragrant.
- Add the diced chicken breast to the skillet, seasoning with salt and black pepper. Cook until browned and cooked through, about 7-10 minutes.
- Stir in the turmeric powder and garam masala, mixing well to coat the chicken in the spices.
- Add the chopped spinach and cook until wilted, about 3-4 minutes.
- Pour in the heavy cream and mix until well combined. Simmer for another 5 minutes to let the flavors meld.
- Adjust seasoning to taste, and remove from heat. Serve hot.
