- Coconut oil - 2 tablespoons

- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Coconut milk - 200 ml
- Almond flour - 2 tablespoons
- Garam masala - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander - for garnish
Steps
- Heat coconut oil in a large pan over medium heat.
- Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chicken thighs to the pan, cooking until browned on all sides, about 5-6 minutes.
- Sprinkle in the garam masala, cumin powder, turmeric powder, chili powder, and salt, stirring well to coat the chicken evenly.
- Sprinkle the almond flour over the mixture and stir to combine.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Reduce the heat to low and cover, allowing to cook for 15-20 minutes, or until the chicken is cooked through and tender.
- Taste and adjust seasonings if needed, then remove from heat.
