Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Coconut milk - 200 ml
  • Almond flour - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander - for garnish

Steps

  1. Heat coconut oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the chicken thighs to the pan, cooking until browned on all sides, about 5-6 minutes.
  5. Sprinkle in the garam masala, cumin powder, turmeric powder, chili powder, and salt, stirring well to coat the chicken evenly.
  6. Sprinkle the almond flour over the mixture and stir to combine.
  7. Pour in the coconut milk and bring the mixture to a gentle simmer.
  8. Reduce the heat to low and cover, allowing to cook for 15-20 minutes, or until the chicken is cooked through and tender.
  9. Taste and adjust seasonings if needed, then remove from heat.
  10. Garnish with fresh coriander before serving.
