- Chicken breast - 300 grams
- Almond flour - 100 grams
- Egg - 1 large
- Coconut oil - 2 tablespoons
- Greek yogurt - 2 tablespoons
- Ginger-garlic paste - 1 tablespoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
- Bell pepper - 1 medium, sliced
- Onion - 1 medium, sliced
- Fresh cilantro - a handful, chopped
Steps
- In a bowl, combine chicken breast, ginger-garlic paste, garam masala, turmeric powder, red chili powder, salt, and lemon juice. Marinate for at least 15 minutes.
- In a skillet, heat 1 tablespoon of coconut oil over medium heat. Add the marinated chicken and cook for about 5-7 minutes until fully cooked. Remove and let it rest.
- In the same skillet, add sliced onion and bell pepper, and sauté until they are soft, about 3-4 minutes. Set aside.
- For the roti, mix almond flour, egg, and a pinch of salt in a bowl. Form a dough and divide it into 2 equal balls.
- Roll each ball into a flat circle (about 6 inches in diameter) on a parchment paper. Heat 1 tablespoon of coconut oil in a non-stick skillet, and cook each roti for about 2-3 minutes on each side until golden brown.
- Assemble the roll by placing the cooked chicken and sautéed vegetables on the roti. Top with Greek yogurt and chopped cilantro, then roll it up tightly.
