Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Coconut oil - 2 tablespoons
  • Greek yogurt - 2 tablespoons
  • Ginger-garlic paste - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Bell pepper - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Fresh cilantro - a handful, chopped

Steps

  1. In a bowl, combine chicken breast, ginger-garlic paste, garam masala, turmeric powder, red chili powder, salt, and lemon juice. Marinate for at least 15 minutes.
  2. In a skillet, heat 1 tablespoon of coconut oil over medium heat. Add the marinated chicken and cook for about 5-7 minutes until fully cooked. Remove and let it rest.
  3. In the same skillet, add sliced onion and bell pepper, and sauté until they are soft, about 3-4 minutes. Set aside.
  4. For the roti, mix almond flour, egg, and a pinch of salt in a bowl. Form a dough and divide it into 2 equal balls.
  5. Roll each ball into a flat circle (about 6 inches in diameter) on a parchment paper. Heat 1 tablespoon of coconut oil in a non-stick skillet, and cook each roti for about 2-3 minutes on each side until golden brown.
  6. Assemble the roll by placing the cooked chicken and sautéed vegetables on the roti. Top with Greek yogurt and chopped cilantro, then roll it up tightly.
