Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch piece, grated
  • Tomato puree - 100 grams
  • Coconut cream - 200 ml
  • Curry powder - 2 teaspoons
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Green chili - 1, slit (optional)

Steps

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Stir in the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
  4. Add the chicken thighs, cooking until they are browned on all sides.
  5. Stir in the tomato puree, followed by the curry powder, turmeric, cumin, and coriander powders; mix well.
  6. Pour in the coconut cream and bring to a simmer, then reduce the heat and let it cook for 15-20 minutes, stirring occasionally.
  7. Season with salt and garam masala, and add slit green chili if using.
  8. Cook for an additional 5 minutes to blend the flavors.
  9. Garnish with fresh cilantro before serving.
