- Chicken thighs, boneless - 400 grams
- Cauliflower, grated - 400 grams
- Onion, thinly sliced - 1 medium (150 grams)
- Garlic, minced - 4 cloves
- Ginger, grated - 1 tablespoon
- Tomato, chopped - 1 medium (100 grams)
- Plain Greek yogurt - 100 grams
- Ghee or coconut oil - 2 tablespoons
- Biryani masala - 2 tablespoons
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Green chili, slit - 1
- Bay leaves - 2
- Cinnamon stick - 1 inch
- Cloves - 4
- Cardamom pods - 4
- Salt - to taste
- Fresh cilantro, chopped - for garnish
- Lemon wedges - for serving
Steps
- In a large bowl, mix the chicken thighs with yogurt, garlic, ginger, biryani masala, turmeric, cumin, coriander, and salt. Allow to marinate for at least 30 minutes.
- In a large skillet, heat ghee or coconut oil over medium heat. Add the sliced onions and sauté until golden brown.
- Add the marinated chicken to the skillet, followed by chopped tomatoes, green chili, bay leaves, cinnamon stick, cloves, and cardamom pods. Cook for about 10-15 minutes until the chicken is browned and cooked through.
- While the chicken cooks, steam the grated cauliflower until tender, about 5-7 minutes. Drain any excess moisture.
- Layer the steamed cauliflower rice over the cooked chicken in the skillet. Gently mix to combine, cover, and let it cook on low heat for another 10 minutes to allow the flavors to meld.
- Remove from heat and garnish with chopped cilantro. Serve hot with lemon wedges.
