- Zucchini noodles - 200 grams
- Canned chickpeas (rinsed and drained) - 120 grams
- Coconut oil - 1 tablespoon
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Tomato puree - 100 grams
- Chili powder - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro (chopped) - for garnish
- Lemon juice - 1 tablespoon
Steps
- Heat coconut oil in a pan over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and grated ginger to the pan and cook for another minute until fragrant.
- Stir in tomato puree, chili powder, ground cumin, ground coriander, garam masala, and salt. Cook the mixture for about 5 minutes on medium heat, stirring occasionally.
- Add the rinsed chickpeas and mix well, letting them heat through for about 3-4 minutes.
- In a separate pot, boil water and add zucchini noodles. Cook for 2-3 minutes until tender but firm.
- Drain the zucchini noodles and add them to the chickpea masala mixture. Toss everything together until well combined.
- Remove from heat, add lemon juice, and garnish with fresh cilantro before serving.
