Ingredients

  • Zucchini noodles - 200 grams
  • Canned chickpeas (rinsed and drained) - 120 grams
  • Coconut oil - 1 tablespoon
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Tomato puree - 100 grams
  • Chili powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro (chopped) - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat coconut oil in a pan over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and grated ginger to the pan and cook for another minute until fragrant.
  3. Stir in tomato puree, chili powder, ground cumin, ground coriander, garam masala, and salt. Cook the mixture for about 5 minutes on medium heat, stirring occasionally.
  4. Add the rinsed chickpeas and mix well, letting them heat through for about 3-4 minutes.
  5. In a separate pot, boil water and add zucchini noodles. Cook for 2-3 minutes until tender but firm.
  6. Drain the zucchini noodles and add them to the chickpea masala mixture. Toss everything together until well combined.
  7. Remove from heat, add lemon juice, and garnish with fresh cilantro before serving.
