Ingredients

  • Cauliflower - 300 grams, chopped into small florets
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Tomato - 1 medium, pureed
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add finely chopped onions and sauté until golden brown.
  4. Stir in minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  5. Add the pureed tomato and cook until the oil begins to separate from the mixture.
  6. Add turmeric, red chili powder, coriander powder, and salt, stirring well to combine.
  7. Introduce the cauliflower florets and mix until they are well coated with the spices.
  8. Cover the pan and let it cook for about 10-15 minutes, stirring occasionally until the cauliflower is tender.
  9. Finish with garam masala and slit green chili, mixing well.
  10. Garnish with fresh cilantro before serving.
