Ingredients

  • Cauliflower - 400 grams, chopped
  • Coconut oil - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1 small, chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the coconut oil over medium heat. Add cumin seeds and let them splutter.
  2. Add grated ginger, minced garlic, and chopped green chili to the pot. Sauté for 2-3 minutes until fragrant.
  3. Add the chopped cauliflower, turmeric powder, and coriander powder. Stir well to combine and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring it to a boil. Reduce heat and let it simmer for about 15 minutes, or until the cauliflower is tender.
  5. Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the coconut milk and heat gently. Season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
