Ingredients
- Cauliflower - 400 grams, chopped
- Coconut oil - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1 small, chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the coconut oil over medium heat. Add cumin seeds and let them splutter.
- Add grated ginger, minced garlic, and chopped green chili to the pot. Sauté for 2-3 minutes until fragrant.
- Add the chopped cauliflower, turmeric powder, and coriander powder. Stir well to combine and cook for another 5 minutes.
- Pour in the vegetable broth and bring it to a boil. Reduce heat and let it simmer for about 15 minutes, or until the cauliflower is tender.
- Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the coconut milk and heat gently. Season with salt and black pepper to taste.
- Serve hot, garnished with fresh cilantro.
