Ingredients

  • Cauliflower - 400 grams
  • Chicken (boneless, cut into pieces) - 200 grams
  • Onion (thinly sliced) - 1 medium
  • Tomato (chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Green chili (slit) - 1
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Mint leaves (chopped) - 2 tablespoons
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Water - 1/2 cup

Steps

  1. Rinse the cauliflower and cut it into florets. Pulse in a food processor until it resembles rice grains, then set aside.
  2. Heat coconut oil in a large skillet over medium heat. Add cumin seeds and let them splutter.
  3. Add the sliced onions and sauté until golden brown. Then add minced garlic, grated ginger, and slit green chili, cooking for another minute.
  4. Add the chicken pieces to the skillet and cook until they are no longer pink.
  5. Stir in the chopped tomato, turmeric powder, biryani masala, coriander powder, and salt. Cook until the tomatoes soften.
  6. Add the cauliflower rice and water to the skillet, mixing well to incorporate all the spices and chicken.
  7. Cover the skillet and let it simmer for about 10 minutes, allowing the cauliflower to cook and absorb the flavors.
  8. Once cooked, sprinkle garam masala, chopped cilantro, and mint leaves over the top. Stir gently to combine.
  9. Serve hot, garnished with extra herbs if desired.
