- Cauliflower - 400 grams
- Chicken (boneless, cut into pieces) - 200 grams
- Onion (thinly sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Green chili (slit) - 1
- Biryani masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh cilantro (chopped) - 2 tablespoons
- Mint leaves (chopped) - 2 tablespoons
- Coconut oil - 2 tablespoons
- Salt - to taste
- Water - 1/2 cup
Steps
- Rinse the cauliflower and cut it into florets. Pulse in a food processor until it resembles rice grains, then set aside.
- Heat coconut oil in a large skillet over medium heat. Add cumin seeds and let them splutter.
- Add the sliced onions and sauté until golden brown. Then add minced garlic, grated ginger, and slit green chili, cooking for another minute.
- Add the chicken pieces to the skillet and cook until they are no longer pink.
- Stir in the chopped tomato, turmeric powder, biryani masala, coriander powder, and salt. Cook until the tomatoes soften.
- Add the cauliflower rice and water to the skillet, mixing well to incorporate all the spices and chicken.
- Cover the skillet and let it simmer for about 10 minutes, allowing the cauliflower to cook and absorb the flavors.
- Once cooked, sprinkle garam masala, chopped cilantro, and mint leaves over the top. Stir gently to combine.
- Serve hot, garnished with extra herbs if desired.
