- Cauliflower - 1 medium head (approximately 600g)
- Ghee or coconut oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Green chili - 1, finely chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, minced
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Lemon juice - 1 tablespoon
Steps
- Remove the leaves and stem from the cauliflower and cut it into florets.
- Pulse the cauliflower florets in a food processor until they resemble rice grains. Set aside.
- Heat ghee or coconut oil in a large skillet over medium heat.
- Add cumin and mustard seeds, and let them splutter for about 30 seconds.
- Add chopped onions, green chili, garlic, and ginger to the skillet, and sauté until the onions are translucent, about 5 minutes.
- Stir in turmeric powder and garam masala, and cook for an additional minute to release the spices' flavors.
- Add the processed cauliflower rice to the skillet, mix well, and season with salt.
- Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
- Remove from heat, stir in fresh cilantro and lemon juice, and serve hot.
