Ingredients

  • Cauliflower - 1 medium head (approximately 600g)
  • Ghee or coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Green chili - 1, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Remove the leaves and stem from the cauliflower and cut it into florets.
  2. Pulse the cauliflower florets in a food processor until they resemble rice grains. Set aside.
  3. Heat ghee or coconut oil in a large skillet over medium heat.
  4. Add cumin and mustard seeds, and let them splutter for about 30 seconds.
  5. Add chopped onions, green chili, garlic, and ginger to the skillet, and sauté until the onions are translucent, about 5 minutes.
  6. Stir in turmeric powder and garam masala, and cook for an additional minute to release the spices' flavors.
  7. Add the processed cauliflower rice to the skillet, mix well, and season with salt.
  8. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  9. Remove from heat, stir in fresh cilantro and lemon juice, and serve hot.
