Ingredients

  • Cabbage - 8 large leaves
  • Ground chicken or turkey - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - 1/2 teaspoon (or to taste)
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Tomato puree - 100 grams
  • Water - 200 milliliters

Steps

  1. Bring a large pot of water to a boil. Add the cabbage leaves and blanch them for 2-3 minutes until softened. Remove and set aside to cool.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.
  3. Add the ground chicken or turkey to the skillet and cook until browned, breaking it up with a spoon.
  4. Stir in cumin, coriander, turmeric, red chili powder, salt, and black pepper. Mix well and cook for another 2-3 minutes.
  5. Remove the skillet from heat and fold in the chopped cilantro. Allow the mixture to cool slightly.
  6. Take a cabbage leaf and spoon about 2-3 tablespoons of the meat mixture into the center. Fold in the sides and roll tightly to enclose the filling. Repeat with remaining leaves and filling.
  7. In a separate pot, combine the tomato puree and water. Bring to a simmer and season with salt and pepper.
  8. Place the cabbage rolls seam-side down in the pot with the tomato sauce. Cover and cook on low heat for about 20-25 minutes, allowing the flavors to meld.
  9. Serve warm, drizzled with the tomato sauce and garnished with additional cilantro if desired.
