- Lamb or goat meat - 500 grams, cut into cubes
- Ghee - 3 tablespoons
- Onion - 1 medium, finely sliced
- Ginger-garlic paste - 1 tablespoon
- Tomato puree - 100 grams
- Green chilies - 2, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat ghee in a heavy-bottomed pan over medium heat.
- Add cumin seeds and let them splutter for a few seconds.
- Add the sliced onions and sauté until golden brown.
- Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant.
- Add the meat cubes and sear them until browned on all sides.
- Incorporate the tomato puree and mix well with the meat.
- Add green chilies, coriander powder, turmeric powder, red chili powder, and salt, stirring to coat the meat evenly.
- Cover the pan and let it simmer on low heat for 30-40 minutes, stirring occasionally, until the meat is tender and the oil separates from the gravy.
- Sprinkle garam masala and mix well before removing from heat.
- Garnish with fresh coriander leaves and serve hot.
