Ingredients

  • Lamb or goat meat - 500 grams, cut into cubes
  • Ghee - 3 tablespoons
  • Onion - 1 medium, finely sliced
  • Ginger-garlic paste - 1 tablespoon
  • Tomato puree - 100 grams
  • Green chilies - 2, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat ghee in a heavy-bottomed pan over medium heat.
  2. Add cumin seeds and let them splutter for a few seconds.
  3. Add the sliced onions and sauté until golden brown.
  4. Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant.
  5. Add the meat cubes and sear them until browned on all sides.
  6. Incorporate the tomato puree and mix well with the meat.
  7. Add green chilies, coriander powder, turmeric powder, red chili powder, and salt, stirring to coat the meat evenly.
  8. Cover the pan and let it simmer on low heat for 30-40 minutes, stirring occasionally, until the meat is tender and the oil separates from the gravy.
  9. Sprinkle garam masala and mix well before removing from heat.
  10. Garnish with fresh coriander leaves and serve hot.
