Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Greek yogurt - 100 grams
  • Ginger-garlic paste - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon, or to taste
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Green chilies - 1-2, slit
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, combine Greek yogurt, ginger-garlic paste, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, lemon juice, and salt to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or overnight for better flavor.
  3. Heat coconut oil in a heavy-bottomed pan over medium heat. Add the finely chopped onion and sauté until golden brown.
  4. Add the marinated chicken to the pan and cook for about 5-7 minutes on high heat, stirring occasionally until the chicken is browned.
  5. Reduce the heat to low, cover the pan, and let it simmer for 25-30 minutes, stirring occasionally, until the chicken is fully cooked and tender.
  6. Once cooked, add slit green chilies and cook for an additional 2 minutes.
  7. Garnish with fresh cilantro before serving. Enjoy hot with a side of keto-friendly cauliflower rice or salad.
