Ingredients

  • Zucchini - 200 grams
  • Okra (Bhindi) - 150 grams
  • Olive oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Tomato - 1 medium, pureed
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander - for garnish
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Spiralize the zucchini to create 'zoodles' and set aside.
  2. Wash and trim the okra, then cut them into small pieces.
  3. In a pan, heat olive oil over medium heat and add cumin and mustard seeds. Allow them to splutter.
  4. Add the chopped onion, garlic, and ginger to the pan and sauté until the onion turns translucent.
  5. Stir in the pureed tomato and cook for about 5 minutes until the oil separates from the mixture.
  6. Add the okra pieces, turmeric powder, red chili powder, and salt to the pan. Cook for about 10-12 minutes until the okra is tender.
  7. Mix in the garam masala and cook for an additional 2 minutes.
  8. Add the zoodles to the pan, tossing everything together and cooking for another 2-3 minutes until the zucchini is just tender.
  9. Remove from heat and garnish with fresh coriander and grated Parmesan cheese if using.
