- Okra (Bhindi) - 150 grams
- Olive oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Tomato - 1 medium, pureed
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander - for garnish
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Spiralize the zucchini to create 'zoodles' and set aside.
- Wash and trim the okra, then cut them into small pieces.
- In a pan, heat olive oil over medium heat and add cumin and mustard seeds. Allow them to splutter.
- Add the chopped onion, garlic, and ginger to the pan and sauté until the onion turns translucent.
- Stir in the pureed tomato and cook for about 5 minutes until the oil separates from the mixture.
- Add the okra pieces, turmeric powder, red chili powder, and salt to the pan. Cook for about 10-12 minutes until the okra is tender.
- Mix in the garam masala and cook for an additional 2 minutes.
- Add the zoodles to the pan, tossing everything together and cooking for another 2-3 minutes until the zucchini is just tender.
- Remove from heat and garnish with fresh coriander and grated Parmesan cheese if using.
