Ingredients

  • Okra - 250 grams
  • Oil (coconut or olive) - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Wash the okra thoroughly and pat it dry with a towel. Trim the ends and cut them into 1-inch pieces.
  2. Heat the oil in a pan over medium heat. Once hot, add cumin seeds and mustard seeds. Let them splutter for a few seconds.
  3. Add the chopped okra to the pan and sauté for about 5-7 minutes until they start to soften.
  4. Stir in the turmeric powder, red chili powder, coriander powder, and salt. Mix well and sauté for another 10 minutes, stirring occasionally.
  5. Once the okra is cooked and slightly crispy, add garam masala and mix well. Cook for an additional 2 minutes.
  6. Remove from heat, add lemon juice and chopped cilantro, and give it a gentle mix before serving.
