Ingredients

  • Okra - 250 grams
  • Onion - 2 medium, sliced
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Coconut oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Wash the okra thoroughly and pat it dry. Trim the edges and cut them into 1-inch pieces.
  2. Heat coconut oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add sliced onions to the pan and sauté until they turn translucent.
  4. Stir in grated ginger, minced garlic, and slit green chili, and cook for another minute until fragrant.
  5. Add the okra pieces to the pan, and sprinkle turmeric powder, coriander powder, and salt. Mix well to coat the okra with the spices.
  6. Cover the pan and cook for about 10 minutes, stirring occasionally, until the okra is tender.
  7. Remove the lid and increase the heat to medium-high. Sauté for another 5 minutes to evaporate any excess moisture.
  8. Sprinkle garam masala over the dish, mix well, and cook for an additional 2 minutes.
  9. Garnish with fresh cilantro before serving.
