- Okra - 250 grams
- Onion - 2 medium, sliced

- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Coconut oil - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Wash the okra thoroughly and pat it dry. Trim the edges and cut them into 1-inch pieces.
- Heat coconut oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add sliced onions to the pan and sauté until they turn translucent.
- Stir in grated ginger, minced garlic, and slit green chili, and cook for another minute until fragrant.
- Add the okra pieces to the pan, and sprinkle turmeric powder, coriander powder, and salt. Mix well to coat the okra with the spices.
- Cover the pan and cook for about 10 minutes, stirring occasionally, until the okra is tender.
- Remove the lid and increase the heat to medium-high. Sauté for another 5 minutes to evaporate any excess moisture.
- Sprinkle garam masala over the dish, mix well, and cook for an additional 2 minutes.
- Garnish with fresh cilantro before serving.
