Ingredients

  • Cauliflower - 200 grams, grated
  • Spinach - 100 grams, chopped
  • Chickpea flour (besan) - 50 grams
  • Coconut flour - 20 grams
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Water - as needed
  • Oil - for frying

Steps

  1. In a mixing bowl, combine the grated cauliflower, chopped spinach, chickpea flour, coconut flour, cumin powder, turmeric powder, salt, red chili powder, grated ginger, and minced garlic.
  2. Mix the ingredients thoroughly and gradually add water until a thick batter forms, ensuring that the mixture holds together but is not too runny.
  3. Heat oil in a frying pan over medium heat.
  4. Once the oil is hot, take spoonfuls of the mixture and carefully drop them into the oil, flattening them slightly to form fritters.
  5. Fry the bhajis until they are golden brown and crispy on both sides, about 3-4 minutes per side.
  6. Remove the bhajis from the oil and place them on a paper towel to drain excess oil.
  7. Serve hot with your favorite keto-friendly dipping sauce or chutney.
