- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Vegetable broth - 500 ml (or water with salt to taste)
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
- Heavy cream - 2 tablespoons (optional, for serving)
Steps
- In a pot, heat coconut oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onion, grated ginger, and minced garlic. Sauté until the onion becomes translucent.
- Stir in the diced beetroot, coriander powder, turmeric powder, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes, or until the beetroot is tender.
- Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro and a drizzle of heavy cream if desired.
