  • Onion - 1 small, finely chopped
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Vegetable broth - 500 ml (or water with salt to taste)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Heavy cream - 2 tablespoons (optional, for serving)

Steps

  1. In a pot, heat coconut oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onion, grated ginger, and minced garlic. Sauté until the onion becomes translucent.
  3. Stir in the diced beetroot, coriander powder, turmeric powder, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes, or until the beetroot is tender.
  5. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro and a drizzle of heavy cream if desired.
