- Almond flour - 100 grams
- Unsweetened shredded coconut - 50 grams
- Ghee - 30 grams
- Erythritol (or any keto-friendly sweetener) - 30 grams
- Heavy cream - 60 ml
- Cardamom powder - 1/2 teaspoon
- Chopped pistachios (for garnish) - 10 grams
Steps
- In a pan, heat the ghee over low heat until melted.
- Add the almond flour and shredded coconut to the pan, stirring continuously for about 5 minutes until lightly toasted.
- In a separate bowl, combine the erythritol, heavy cream, and cardamom powder.
- Pour the cream mixture into the pan with the almond flour and coconut, stirring well to combine.
- Cook the mixture on low heat for another 5-7 minutes, stirring constantly until it thickens and starts to leave the sides of the pan.
- Remove from heat and let it cool slightly before transferring to a greased plate or tray.
- Spread the mixture evenly and press down firmly, then refrigerate for about 15 minutes to set.
- Once set, cut into squares or diamonds and garnish with chopped pistachios before serving.
