Ingredients

  • Almond flour - 100 grams
  • Unsweetened shredded coconut - 50 grams
  • Ghee - 30 grams
  • Erythritol (or any keto-friendly sweetener) - 30 grams
  • Heavy cream - 60 ml
  • Cardamom powder - 1/2 teaspoon
  • Chopped pistachios (for garnish) - 10 grams

Steps

  1. In a pan, heat the ghee over low heat until melted.
  2. Add the almond flour and shredded coconut to the pan, stirring continuously for about 5 minutes until lightly toasted.
  3. In a separate bowl, combine the erythritol, heavy cream, and cardamom powder.
  4. Pour the cream mixture into the pan with the almond flour and coconut, stirring well to combine.
  5. Cook the mixture on low heat for another 5-7 minutes, stirring constantly until it thickens and starts to leave the sides of the pan.
  6. Remove from heat and let it cool slightly before transferring to a greased plate or tray.
  7. Spread the mixture evenly and press down firmly, then refrigerate for about 15 minutes to set.
  8. Once set, cut into squares or diamonds and garnish with chopped pistachios before serving.
