Ingredients

  • Baingan (eggplant) - 200 grams
  • Plain Greek yogurt - 200 grams
  • Cumin powder - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the baingan (eggplant) into thick rounds and place them on a baking sheet.
  3. Drizzle olive oil over the eggplant slices and sprinkle with salt and chili powder. Toss to coat evenly.
  4. Roast the eggplant in the preheated oven for 20-25 minutes or until the slices are tender and slightly charred.
  5. Remove the roasted eggplant from the oven and let it cool for a few minutes.
  6. In a mixing bowl, combine Greek yogurt, cumin powder, lemon juice, and salt. Mix well.
  7. Chop the roasted eggplant into small pieces and add it to the yogurt mixture. Stir gently to combine.
  8. Garnish with chopped fresh coriander leaves and serve chilled.
