  • Spinach - 50 grams, chopped
  • Onion - 1 small, finely chopped
  • Green chili - 1 small, finely chopped
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Tomato sauce - 60 grams (sugar-free)
  • Bell pepper - 1/2, sliced
  • Mushrooms - 50 grams, sliced
  • Fresh coriander - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, whisk together the eggs, almond flour, cumin powder, salt, and black pepper until smooth.
  3. In a non-stick skillet, heat the olive oil over medium heat and sauté the chopped onions, green chili, and spinach until the onions are translucent and spinach is wilted.
  4. Add the sautéed mixture to the egg and almond flour batter and mix well.
  5. Pour the mixture into a greased pizza pan or baking sheet, spreading it evenly to form a crust.
  6. Bake in the preheated oven for 15-18 minutes or until the edges are golden brown and the center is set.
  7. Remove the crust from the oven and spread the sugar-free tomato sauce over the top.
  8. Sprinkle the grated cheese evenly, followed by the sliced bell pepper and mushrooms.
  9. Return the pizza to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  10. Once done, remove from the oven, garnish with fresh coriander, slice, and serve hot.
