Ingredients

  • Almond flour - 100 grams
  • Psyllium husk - 10 grams
  • Eggs - 2 large
  • Water - 50 ml
  • Salt - 1/2 teaspoon
  • Chicken breast (minced) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Green chili (finely chopped) - 1 small
  • Ginger-garlic paste - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Fresh coriander leaves (chopped) - 2 tablespoons
  • Oil or ghee - for cooking
  • Cheese slices - 2 (optional)
  • Lettuce leaves - 2

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, 1 egg, salt, and water. Mix until a dough forms. Let it rest for 10 minutes.
  2. In another bowl, mix minced chicken, chopped onion, green chili, ginger-garlic paste, coriander powder, cumin powder, turmeric powder, red chili powder, and chopped coriander leaves. Mix well and set aside.
  3. Divide the dough into two equal portions and roll each into a thin circle (about 5-6 inches in diameter) on a parchment paper or lightly floured surface.
  4. Heat a non-stick skillet over medium heat and cook each roti for about 2-3 minutes on each side until golden brown. Remove and keep warm.
  5. In the same skillet, add a little oil or ghee and cook the chicken mixture over medium heat until the chicken is cooked through and no longer pink, about 7-10 minutes.
  6. In a separate bowl, beat the remaining egg and scramble it lightly in the skillet until fully cooked. Combine the scrambled egg with the cooked chicken mixture.
  7. Place a portion of the chicken and egg filling onto one roti, top with a slice of cheese (if using) and a lettuce leaf. Cover with another roti to form a burger.
  8. Repeat with the second portion. Serve hot with low-carb dipping sauce or chutney if desired.
