- Almond flour - 150 grams
- Psyllium husk - 1 tablespoon
- Eggs - 2 large
- Water - 60 ml
- Salt - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Ghee or coconut oil - 2 tablespoons
- Chopped cilantro - 2 tablespoons
- Green chili, finely chopped - 1 (optional)
Steps
- In a mixing bowl, combine almond flour, psyllium husk, salt, cumin powder, turmeric powder, red chili powder, and black pepper.
- In another bowl, beat the eggs and mix in the water until well combined.
- Pour the egg mixture into the dry ingredients and mix until a dough forms. Adjust with more almond flour or water if necessary.
- Knead the dough for about 2-3 minutes until it becomes smooth and pliable.
- Divide the dough into 4 equal portions and roll each portion into a ball.
- Flatten each ball between two sheets of parchment paper into a thin circle, about 5-6 inches in diameter.
- Heat a non-stick skillet over medium heat and add 1/2 tablespoon of ghee or coconut oil.
- Once hot, place one flattened roti in the skillet and cook for about 2-3 minutes on each side, until golden brown and cooked through.
- Repeat the cooking process for the remaining rotis, adding more ghee or oil as needed.
- For the filling, whisk together the remaining eggs, chopped cilantro, and green chili (if using) in a bowl.
- In a separate skillet, scramble the egg mixture until fully cooked and set aside.
- To serve, place a portion of the scrambled eggs on one roti, fold it over, and enjoy!
