Ingredients

  • Almond flour - 150 grams
  • Psyllium husk - 1 tablespoon
  • Eggs - 2 large
  • Water - 60 ml
  • Salt - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Ghee or coconut oil - 2 tablespoons
  • Chopped cilantro - 2 tablespoons
  • Green chili, finely chopped - 1 (optional)

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, salt, cumin powder, turmeric powder, red chili powder, and black pepper.
  2. In another bowl, beat the eggs and mix in the water until well combined.
  3. Pour the egg mixture into the dry ingredients and mix until a dough forms. Adjust with more almond flour or water if necessary.
  4. Knead the dough for about 2-3 minutes until it becomes smooth and pliable.
  5. Divide the dough into 4 equal portions and roll each portion into a ball.
  6. Flatten each ball between two sheets of parchment paper into a thin circle, about 5-6 inches in diameter.
  7. Heat a non-stick skillet over medium heat and add 1/2 tablespoon of ghee or coconut oil.
  8. Once hot, place one flattened roti in the skillet and cook for about 2-3 minutes on each side, until golden brown and cooked through.
  9. Repeat the cooking process for the remaining rotis, adding more ghee or oil as needed.
  10. For the filling, whisk together the remaining eggs, chopped cilantro, and green chili (if using) in a bowl.
  11. In a separate skillet, scramble the egg mixture until fully cooked and set aside.
  12. To serve, place a portion of the scrambled eggs on one roti, fold it over, and enjoy!
