Ingredients

  • Ripe avocados - 2 medium
  • Cauliflower rice - 400 grams
  • Coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Green chili - 1, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large skillet, heat the coconut oil over medium heat.
  2. Add cumin seeds and mustard seeds to the skillet and sauté until they start to splutter.
  3. Stir in the finely chopped green chili and sauté for another minute.
  4. Add the cauliflower rice to the skillet and cook for about 5-7 minutes, stirring occasionally until tender.
  5. In a mixing bowl, mash the ripe avocados and mix in turmeric powder, coriander powder, salt, and lemon juice until creamy.
  6. Once the cauliflower rice is cooked, remove it from heat and fold in the mashed avocado mixture.
  7. Garnish with fresh chopped cilantro and serve warm.
