Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Paneer - 100 grams, crumbled
  • Potato - 100 grams, boiled and mashed
  • Cauliflower florets - 100 grams, blanched
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Grate the cauliflower and steam it for about 5 minutes until tender. Let it cool and then squeeze out excess moisture using a clean kitchen towel.
  3. In a mixing bowl, combine the steamed cauliflower, almond flour, egg, and half of the mozzarella cheese. Mix until a dough forms.
  4. Spread the cauliflower dough onto a parchment-lined baking tray to form a pizza crust. Bake for 15-20 minutes until golden brown.
  5. In a skillet, heat olive oil over medium heat. Add the boiled and mashed potato, blanched cauliflower florets, cumin powder, turmeric powder, red chili powder, and salt. Cook for 5-7 minutes until well combined.
  6. Remove the crust from the oven and spread the potato-cauliflower mixture evenly on top.
  7. Sprinkle the remaining mozzarella cheese and crumbled paneer over the pizza.
  8. Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh cilantro before slicing and serving.
