Ingredients

  • Cauliflower - 300 grams, cut into florets
  • Zucchini - 150 grams, diced
  • Coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the coconut oil in a large pan over medium heat.
  2. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
  3. Stir in the turmeric, garam masala, and red chili powder, cooking for another minute.
  4. Add the cauliflower florets and diced zucchini to the pan, stirring well to coat with the spices.
  5. Season with salt and cover the pan, allowing the vegetables to steam for about 10-12 minutes, stirring occasionally, until they are tender.
  6. Once the vegetables are cooked, remove the lid and let any excess moisture evaporate for another 2-3 minutes.
  7. Remove from heat and stir in the chopped cilantro and lemon juice before serving.
